Herb and Olive Pork Chops

This is super simple, cheap and fast to make and delicious with a simple side like roasted broccoli, farro, TJ grain mix, etc. The chops need to sit in the marinade after they are cooked, so this is a good make-ahead meal.










Ingredients:

  • 1/3 cup olive oil plus 1 Tbl. more

  • 1/4 cup chopped green olives

  • 2 Tbl. minced shallots

  • 2 Tbl. lemon juice

  • 2 Tbl. chopped parsley

  • 1 minced or grated garlic clove

  • 1/2 tsp. dried oregano

  • 3 thyme sprigs (okay to leave out if you don't have any)

  • 4-6 thin-cut boneless pork loin chops (they usually have them at Trader Joes and the grocery store. If not, get the thicker boneless pork chops and either pound them thin or slice them in half horizontally)


Instructions:

  1. In a large shallow dish, combine all of the ingredients except the pork chops.

  2. In a cast iron pan, heat the 1 Tbl. of olive oil over medium-high heat. Season the chops all over with salt and pepper. Add them to the pan - doing it in two batches if needed to avoid crowding them too much - and cook about 2 minutes on each side (you might need longer if you have thicker chops).

  3. Place the cooked chops in the shallow dish with the marinade and let sit for 15-30 minutes, turning and basting a few times. Serve whenever you're ready.
